Mayonnaise Fish….cause everything is better with Mayo!

Fish is generally a healthy choice (from a diet perspective, not from an ecological one necessarily).  But this recipe is not healthy.  Just to be clear.  But its very much a crowd pleaser, and one of Papa Ron’s favorite dishes.  (Note:  Papa Ron is my Dad.  My brother’s kids started calling him that years ago and it stuck.  Papa Ron loves mayonnaise more than anyone I know and he is a pretty big fan of my cooking, but so far I am not sure if he has even read this blog!)

Start with a flaky fish like Tilapia, Perch, Roughy, Catfish, etc.  Line a broiler pan with foil, spray with olive oil spray.  Place filets on pan and season with salt and pepper.  Then mix 1/2 cup softened butter, 1/2 cup parmesan cheese, 1/4 cup mayonnaise, chopped fresh basil, onion powder, 2 T or more lemon juice.  Spread the mixture evenly on the fish filets (I find the best method is to put a generous spoonful on each filet and then spread it out with your fingers to cover the entire fish filet).

Bake in at least a 425 or even a broiler if you keep a close eye.  Let if cook until it gets golden brown and bubbly.  I usually serve with a steamed asparagus tossed with a little butter, lemon juice, sesame seeds and kosher salt, cracked pepper. Pair with some rice or more veggies if you are avoiding the carbs.  You need to do something to make up for how unhealthy this fish is.

But I promise its melt in your mouth yummy.
